Notes from the Roaster

The microclimates and volcanic soil from Lake Takengon to Lake Toba create the ideal conditions for the production of this Karo Highlands blend. Harvested by small producers (~1 hectare farms) in both the Lintong and Aceh regions, cherries are converted from fruit to dry green bean by the traditional Indonesian method of 'giling basah' or wet hulling.

Once removed from the cherry, the bean – still coated with parchment and mucilage - is fermented overnight, and then washed to remove the mucilage. Following several days of sun drying, the parchment is removed (‘hulling’). and the bean is again sun dried during the day and stored in bags overnight to continue fermentation before export. Before roasting, these beans appear dark green or bluish in color.
