Ethiopia is the birthplace of Arabica coffee and Yirgacheffe has long been known for its excellent quality. In Yirgacheffe, the beans have traditionally been washed -- processed in water to remove the pulp and mucilage after harvest. The result is a bright, clean cup known for citrus flavors. Roasting it light highlights its aromatics.
